Whole Baked Salmon – (serves 6-8)
Ingredients:
Whole Ground Spices
Dry Herb Rub (1 tsp of each)
Rosemary
White or Black Pepper
Chilli Pepper (Optional)
Salt
Finishing for Glazing Fish
½ Whole Fresh Lime or Lemon squeezed
ABEYA Toasted Sesame Oil
Chopped Garlic – 2 cloves
Crushed/grated fresh ginger
1 tbsp of Maple Syrup
8 Mini sweet peppers
3 small or 2 medium shallots
Salt & Pepper
1 Whole Wild Caught Atlantic Salmon (Cleaned)
Pre-heat Oven to Baking Temperature @ 350F
Prepare vinaigrette (dipping or finishing sauce) for fish.
Squeeze a fresh lemon and/or lime into a small bowl
Add ⅓ cup of ABEYA toasted sesame oil
Add maple syrup to taste
Throw in grated ginger, chopped garlic, salt and pepper!
Finely chop up colorful sweet peppers and shallots and soak these in the bowl of vinaigrette.
Cover and refrigerate for 15-20 minutes.
Place cleaned whole fish on well-oiled baking tray
Season the fish by rubbing salt and dry herbs on both sides.
Make slight slits on fish and insert chopped garlic in slits (optional)
Baste fish with ABEYA cold pressed sesame oil
Slide the fish into the oven and bake for 15 – 20 minutes.
For a crispier fish switch from bake to broil for a few more minutes.
Plate fish once ready; pour glaze or vinaigrette over fish. Serve hot!
